This is a dense loaf of bread and sometimes that is just what I feel like. I’ve been making my own bread for a while now, because I want to eat less processed bread. I slice it thinly the next day and store in the freezer, taking out as needed.

 

Ingredients:

2½ cups Te Atatu Toasted Gluten Free Blend Muesli

4 tablespoons chia seeds

¼ cup psyllium husk

¼ cup tahini

1 teaspoon salt

1½ cup cold water

 

Method:

Line a loaf tin with lightly greased baking paper.

Place all ingredients in a mixing bowl and mix until well mixed and quite thick.

Spoon into the prepared loaf tin and firmly press down to remove any gaps.

Bake on fan bake at 180 degrees celsius for one hour, cool and remove from the tin.

Slice and enjoy.
