I often get asked for easy, low sugar muesli bar recipes, so here is one for you to try.
They are moreish but not sweet, and they are also a great source of protein and fibre.
Ingredients:
2 cups Te Atatu Toasted Healthy Blend Muesli
½ cup melted coconut oil
1 cup dried cranberries
½ cup smooth nut butter
1 orange
Method:
Zest the whole orange, cut it in half, juice one half. Peel and deseed the other half and roughly chop into
1cm cubes. Then line a 20cm x 20cm dish with grease proof paper.
In a kitchen mixer bowl place the melted coconut oil, the orange juice and the muesli. Mix and let it soak for 5 minutes. Then add the cranberries, nut butter, orange zest and chopped up orange pieces and blend. If you don’t have a mixer, you could do this all by hand in a bowl - just make sure you mix it well.
Tip the mix out into your prepared dish and the press it evenly into the dish with a spatula. Place in the fridge until set, cut into squares and store in an airtight container in the fridge or freezer. You could even wrap each square individually to make an easy addition to work or school lunchboxes. Just put them straight from the freezer into your lunch container and they defrost in time for morning tea.
