Tis the season of feijoa and I’ve ended up with a very large bucket of them from a friend. So I made this crumble and took it to a friend’s place for pudding, everyone loved it. The key is that is it’s not too sweet. It would also be lovely with a cuppa.
Ingredients:
2 cups plain flour
1 cup Te Atatu Toasted Original Blend muesli
1/2 cup brown sugar
200g soft butter
1 green apple cored and diced
6 or 7 medium feijoa skinned and diced
2 teaspoons lemon juice
1/4 cup brown sugar
Method:
Preheat the oven to 180C and lightly grease a dish approx 20x30cm.
Place the first 4 ingredients in a blender and blitz to a soft crumbly dough.
In another bowl combine the last 4 ingredients.
Now to assemble place half the dough in the bottom of the dish and press down with the back of a fork
Spread the diced fruit mix evenly over the top of the dough.
Then top with the rest of the dough mix and press down again with the back of a fork.
Cool for 40 mins or until the top is lightly browned.
Cool and then cut into 12 larger pieces or 24 squares.
Store in an airtight container and enjoy with a cuppa or as a delicious pudding with a dollop of whipped cream or Greek yoghurt.
