These oat cakes are so delicious, the muesli, spring onions and cheese go suprisingly well together.
I blitz everything together in a food processor and then divide the mixture in two and roll into logs in clingfilm. You can then chill and set them in the fridge before slicing and baking or you can freeze them and defrost, slice and bake whenever you need some delicious oatcakes. I’ve made these a few times now and everyone was back for seconds or thirds! Delicious as is or with your favourite cheese and chutney.
Ingredients:
200g Te Atatu Toasted Healthy Blend
60g plain flour
1 teaspoon salt
1 teaspoon baking powder
60g softened butter
90g finely grated cheese - tasty is best
4 sliced spring onions
1/3 cup approx of hot water
Method:
Blitz the first four ingredients in a food processor, add the softened butter, blitz again, then add the grated cheese and sliced spring onions and blitz again to just mix in. Now add the hot water slowly as you blitz again to form a dough ball.
Remove the dough from the food processor and divide up into two even pieces on two squares of cling film. Shape roughly into logs and then roll holding the ends so it forms a round log. Place in the fridge to set for a minimum of 4 hours ready for slicing.
Preheat the oven to 180C and line a tray with baking paper. Take out your rolled log and carefully slice it with a sharp knife and biscuit discs and place these on an oven tray.
Bake for 25 minutes, they should be a nice golden colour and remove from the oven and set aside to cool.
Store in an airtight container, best eaten within three days.
